Starting listening immersion, how to get the most out of it?

I like watching anime in general. Not a big fan of Dramas. Currently watching a bunch of shows from when I was a kid. Circa 2000s when the comedy was cringy and the style of speaking absurd. But that comes with the risk of me going into the wild and accidently using that style of speech or grammar. More so if I’m using sentences from anime themselves.

I will inherently pick some if it due to the fact I’m watching it, but I would prefer to have my audio practice sentence be as close to natural as possible when I’m pausing to think of a word or how to string a sentence together.

And to further point out, they also state the are good with reading manga as well. I tend to read a lot more than I watch and having to stop to make a card for words I see often is time consuming. So kinda went off the branch of anime which is what I probably WOULD use it for, though the manga and LN side of it would be useful too.
