I both see them in the same types of sentences and it seems like they mean basically the same thing, so what’s the difference in usage, nuance, etc?

Two main differences. The first is that にかけて is a bit more formal. You’ll often hear it in weather reports or written language. Second is that にかけて can also be used to refer to large locational regions. Ex: 関東から東北にかけて雨が降り続いている。
まで is more broad and very much more frequent in spoken communication. It CAN be used for locations, but typically more specific ones like 黄色い線まで or 空港まで
