How many days to give myself to be sure my current learning is easy enough and I can increase my daily load?

In the beginning I was doing 10 new words (Anki) and 5 new grammar points (Bunpro) a day. I have jumped to doing 12 new words and 6 new grammar points a day 6 days after getting back to Japanese.

Is six days enough to be sure I can increase the dose of learning again?

I do not want to burn out again, because last time it caused a 2 years long break for me.

I would advise you against raising the quantity too much.
In my case I went too fast in the early stages, so much so that I came to a point where I spent like 95% of the time doing reviews of old content. So, based on my experience, I think you should set yourself to a pace and just follow it, embracing the fact that the first period will without a doubt be slower.
Remember: if you’re learning x words today, you’ll have to review them at least 10 times, as far away as a year from when you first learned them. Think of it like banking interest, they’re similar in that they can snowball out of control.

I have forgotten to mention I used to be able to recall like 1000-1400 words before my break.

Can I then increase my daily load to catch up?

You are probably going though the points you already familiar with? If so, with time same amount of points will take you more time (until you it will take again less time as you advance in a language).
5 points is a very good pace.
As for extra time I would just read a book or something else non-srs

Fortunately or unfortunately, an anki deck is a bell curve.

Some will say “Please take it slower, because the number of reviews are exponential”
I did 803 reviews in 1 day when learning 12 cards a day- years ago.

Now I recomend- have a strategy to get over the hump, or flaten the curve.
To get over the hump -
Doing flash cards while walking outside Is a total game changer for me. Pacing in the driveway counts.

To flaten the curve-
pick some number of reviews [mine is 150] if you have less, use cram in bunpro or filtered deck in anki to do more reviews.

If you have more than 150 reviews - just stop after 150. Reviews will still be there Tomorrow.
