I was doing my reviews when I got to ーます (ru verb) conjugation and I had to basically unconjugate the word. For example 食べます → 食べる. But I came across a verb I didn’t know, so I couldn’t tell if it was a Ru or U verb. Especially since the verb ended in ーります .
Is there anyway to tell if it’s Ru or U in these cases?

There’s a rule of thumb that if it has an …eる or …iる sound then it’s a 一段(るverb) otherwise it’s a 五段(うverb) but there are a few very common exceptions.

In some cases you just have to know the word.
For example, if you just hear かります out of context, you wouldn’t know if that’s 狩る→狩ります or 借りる→借ります.
