I don't understand this example sentence

As far as I’m aware, 出 means leave, so how can this mean “attend class”?

出る can mean a lot more than just to leave

In English we kinda do this when we say, “Go out to the movies,” or things like that. In a sense we are exiting where we are in the direction of the place we want to attend.
