Saitama Prefecture
Gokabo 五家宝
Gokabo is a kind of wagashi (traditional Japanese sweet) that is famous in Saitama Prefecture. A rice cake is hardened with syrup to create the core; this is then wrapped with kinako (a fermented soybean powder) mixed with more syrup and hardened again. Finally, kinako is sprinkled on top. Sweets such as these complement green tea particularly well and are regularly used in tea ceremonies.
Sato Imo 里芋
This autumn potato is eaten in a multiplicity of dishes in Japan, and is famous in Saitama. It is used in many boiled dishes such as stews and miso soup, and is versatile, as of course, most potatoes are. Be sure to visit some of the famous places in Saitama that serve things ranging from sato imo croquettes to cheesy potatoes.
Mackerel Sushi 鯖寿司
A unique characteristic of this rich sushi is that it is soaked in Japanese vinegar before being broiled, releasing a unique aroma. It is fresh and firm, and will be one of the most flavourful sushis you can taste in Japan. You can dip the fish part in a little soy sauce before eating, to fully bring out the flavour, but be sure not to use too much or you will mask the rich taste of the carefully prepared mackerel.
