Hoto ほうとう
This udon dish is made by boiling pumpkin into miso soup until it tenderises and melts into the soup to create a unique sweet taste. Unlike most udon dishes, the udon are not par-boiled beforehand, but cooked raw in the soup. It is a starchy meal, high in gluten. Seasonal vegetables such as potatoes, onions and carrots, and meat such as chicken or pork, is used depending on your taste.
Mimi みみ
This Yamanashi speciality is enjoyed at times when many people gather, such as festivals and New Year. Various vegetables are boiled in a soup along with bite-sized pieces of dough that should be pinched at either end to resemble an ear, hence the name ‘mimi’.
Bitter Melon 苦瓜
If you like bitter food, this one is definitely for you! This vegetable (technically a fruit), is famous in Yamanashi and is versatile, being used in many kinds of salads, as well as otsumami (a nice accompaniment to an alcoholic drink) or grilled with things such as egg.

Around Fujisan I recommend everything blueberry! If you visit in summer, you can go and get an all-you-can-eat, pick it yourself experience directly at most of the farms. If you are there outside of blueberry season, many michinoeki (roadside stations) will sell blueberry juice and wine, and if you happen to stop at Fujikawaguchiko Oishii Park, you can buy blueberry jam, dried blueberries, cookies and fresh blueberry milk buns at the strange-shaped community shop building. They also sell blueberry ice cream in summer!
If you are a fan of ‘special’ ice cream, check the yatai stalls next to the Fujisan Narusawa Hyoketsu wind and ice caves near Fujikawaguchiko. They sell cream corn ice cream and very good tofu ice cream, which is an experience in itself.
