We’ve arrived in Nagoya, the capital of Aichi Prefecture!
Aichi Prefecture

Hitsuma Bushi ひつまぶし

This is essentially a bowl of rice, topped with eel that is cut into strips. It is famous for having three unique ways of eating. First, you can enjoy the taste of the eel as is is; second, you can add accompaniments such as onion and wasabi; third, you can add stock to the rice bowl. Adding stock or tea to a bowl of rice is known as ochazuke.

Miso Katsu 味噌カツ

This dish, famous in Nagoya, is a pork fillet that is deep fried in crumbs and topped with black miso. It can be eaten with thick, gloopy miso or with more of a thin sauce variation. Most places have a half-and-half option on the menu. It can be enjoyed with soup and rice, but a bed of cabbage is a must!

Miso Stewed Udon 味噌煮込みうどん

For this dish, very thick udon noodles are boiled in a pot with a strong miso soup. It is wonderful on cold days and will warm you up. Pop an egg on top and enjoy the warming sensation and deep taste.

It only costs 470 yen to get to Gifu City, the capital of Gifu Prefecture. I’m going to bed now, but I imagine that by the time I wake up, we’ll be there… so let’s look forward to Gifu at 94,190!

Sorry, I’ve been super busy all day so I’m a bit late. We’re in Gifu!

Gifu Prefecture

Lotus Potato 菊芋

This potato, lower in calories than other potatoes because of its low starch content, was actually originally imported from North America and became famous in Gifu. It can be harvested at the end of the year and eaten raw. It is very versatile, going well with various vegetables and sauces.


Genki Tama 元気玉

This famous garlic is delicious in an egg dish, made by soaking boiled eggs in sukiyaki sauce and a hell of a lot of garlic! After soaking them for at least two hours (preferably overnight if you have time), you can cut them up and add whatever toppings you want. It goes well with spring onions and chilli.


Sweetfish 鮎

This small fish can be eaten whole. It is generally salted and barbecued over hot coal to add the extra flavour. It is then eaten from a wooden skewer (kushi).
