Shiga Prefecture is known for being home to Lake Biwa, the biggest lake in Japan, so it is fitting that this dish is traditionally eaten by the lakeside. It is a Japanese hot pot (nabe) made with beef, chicken and/or fish from the lake. It is made with a sukiyaki-style sauce and is traditionally eaten on celebration days, such as Obon and New Year’s Day.
Red Konnyaku 赤こんにゃく
Konnyaku is a Japanese vegetable (devil’s tongue, according to jisho), which isn’t found in the west. It has a tough, jelly-like consistency and is very versatile in terms of bulking up dishes such as soups and hot pots. Shiga Prefecture is famous for the red version of this, which is dyed using a kind of iron. It doesn’t lose its colour even when boiled. There are various theories around why it was dyed red in the first place, but the exact origin has not been traced.
Funazushi 鮒寿司
A very different style of sushi, funazushi is a kind of sushi which is made by fermenting crucian carp with rice over a long period of time. During the fermentation process, the bones of the fish become soft and can be eaten with the rest of the fish.
