Okayama Prefecture
Tsuyama Offal Udon 津山ホルモンうどん
I never like translating the word ホルモン into ‘offal’, because in English, it’s seen as a bad thing. If anyone has any better ideas, please let me know. Offal is very popular in Japan, served in many ways, largely as yakiniku and as stew, but Okayama has a unique way of presenting their offal, and that is with udon. This udon is mixed with beef offal and cooked on an iron griddle. Delicious!
Mamakari ママカリ
This fatty fish is in season from late summer to late autumn and is famous specifically in Okayama Prefecture, since the fish come in through the South China Sea, into the Seto Naikai Sea, between Honshu and Shikoku. It is generally pickled and eaten as it is with rice, as sushi.
White Noodles and Watermelon そうめん西瓜
Yes, you read correctly, and honestly, there isn’t much to say about this one. Of course, the noodles should be eaten chilled alongside the watermelon, and you can serve it in the shell of the watermelon for a fun experience. You can add various toppings like sesame seeds.
