Ishikawa Prefecture
Blackthroat Seaperch のどくろ
As suggested in the name, when you open the mouth of this fish, you can see a distinctly black throat. Beautiful. This is an oily fish that is extremely expensive, and is therefore seen as an elegant fish and is eaten at events such as Obon and New Year.
Kanazawa Curry 金沢カレー
Kanazawa city is famous for its curry, and there are actually more curry restaurants per 100,000 people in Ishikawa Prefecture than any other prefecture in Japan! It is a dark colour, close to black, and a deep-fried pork cutlet is placed on top, followed by tonkatsu sauce.
Jibuni 治部煮
This warming stew is made with either duck or chicken meat and is stewed with flour, which turns the soup thick. The flour is also important as it seals in the taste of the meat. Add soy sauce, mirin, sugar and sake, plus any vegetables you want, and enjoy this hearty, warming dish, preferably on a cold day!
