Tofu Chikuwa 豆腐ちくわ
Chikuwa is a tube of fish paste, steamed to make a fish cake, often found in oden stew in the winter. One famous dish in Tottori Prefecture is the tofu version of this. For those of you who prefer the delicate taste of tofu to that of fish, this dish is for you. It is generally eaten as it is, with a little soy sauce.
Iwagaki Oysters 岩牡蠣
Iwagaki is the kind of oyster that is caught from the sea of Japan. They are in season during the summer, unlike the ones caught from the Pacific side, which are caught in the winter. They have a creamy taste and a delicate flavour. They are distinguished from regular oysters by their large size.
Sardine Dango いわし団子
A dango is basically a food ball. That was a great scientific explanation, I know. Rice dango, meat dango, dango made with wheat flour, etc. are all often eaten in Japan, but this unusual dango, made with sardines, is famous in Tottori Prefecture. Sardines are mashed up with ingredients such as egg, burdock root, ginger and other herbs and spices, and boiled in a broth to make a warming dish.
