Shimane Prefecture

Izumo Soba 出雲そば

Darker than average soba, the characteristic point of this one is that it is served in a round box. Historically, it was served in a square box but since they were difficult to wash, the shape gradually changed. Traditionally served with a cold soup, this dish is great on hot days.

Hashimaki はしまき

Hashimaki is a food often eaten in festivals around the Kansai region and is famous in Shimane Prefecture. It is basically the same as okonomiyaki (a Japanese pancake with various fillings and toppings), but this is wrapped around a disposable chopstick so it can be eaten with one hand.


Imoni 芋煮

As the name suggests, this dish is stewed potatoes. The meat used depends on the region, but in Shimane, it is traditionally made with roasted sea bream and satoimo potatoes. It is available all year round, but most often eaten in the autumn.
