Saga Prefecture
Hot Springs Tofu 温泉湯豆腐
Tofu is an everyday food in Japan that is very cheap and widely eaten. It can act as a substitute for meat in most situations and is very low in calories, with no fat. Saga Prefecture’s speciality is tofu boiled in water from hot springs. This water has minerals in it, which cause the tofu to melt when it is boiled, creating a creamy soup.
Turtle Claws 亀の手
No, not really turtle claws, although that would certainly make for an interesting article. The name comes from the shape of this small mollusc that is found on and around the coast of Saga Prefecture. It is boiled in salt water and, after peeling away the shell, eaten as it is. It is full of minerals from the sea and is seen as a super healthy food around the local area.
Spring Number One 春一番
You can probably guess that I struggled with that translation. Spring Number One, or Haruichiban, are the famous onions of Saga Prefecture. You can probably tell that they are in season in the spring, and they are much sweeter than normal onions, so can be eaten raw with ease. They are therefore recommended for use in salads.
