Kumamoto Prefecture
Kumamoto Ramen 熊本ラーメン
Kumamoto ramen originates from the previously mentioned Hakata ramen, but with some notable differences. While Hakata ramen’s soup is made by boiling pork bones, Kumamoto’s soup also has chicken bones added into the mix. Furthermore, garlic is added for a mellow taste. Medium-thick, straight noodles are used and boiled to a firm texture.
Horse Meat 馬肉
Don’t knock it until you’ve tried it! I personally think this is absolutely delicious. Kumamoto Prefecture produces the most horse meat of any prefecture in Japan. It is generally eaten in thinly-sliced, raw pieces with onions, ginger paste and garlic paste. It is then dipped in a sweet soy sauce.
Yacon ヤーコン
Yacon is a healthy root vegetable that was introduced into Japan in the 1980s and has become famous in Kumamoto Prefecture.It is related to the potato, but in contrast to normal potatoes, has very little starch and can be eaten raw. It is sweet and crunchy and therefore known as the ‘field pear’. Despite it being eaten raw, it is surprisingly versatile, and can be eaten in soups, stews, as a dried snack or even as a jam.
