Chicken Tempura とり天
OK, time for some old-fashioned sexism! In the early Showa era, Japanese fried chicken (karaage) contained bones and was considered too difficult for women to eat. Therefore, a softer version with no bones was introduced and the light batter proved a hit in Oita. Chicken tempura is now extremely popular throughout Japan. It is eaten in a variety of contexts, and is often found in udon restaurants.
Soft-Shelled Turtle すっぽん
Right, this is going to be the most unusual article of the entire race. First, to energise your body, you should drink a glass of soft-shelled turtle blood. It is said to have a very high nutritional content. You can mix it with apple juice to make it sweeter. Next comes the turtle soup, filled with turtle meat and vegetables. Finally, for dessert, you can eat a sweet soft-shelled turtle jelly. Yum.
Dried Young Sardines ちりめん
These little fish are caught in Beppu Bay and dried without any additives; they therefore retain all the taste. They go well in salads and soups, or just simply with some rice.
