Yamagata Prefecture

Hiyashi Ramen 冷やしラーメン

Yamagata is located in a basin, making it a heat trap in the summer. This cold-served ramen was born almost a hundred years ago when a customer asked a shopkeeper why they could have cold soba but not cold ramen. Just like a cold drink in the middle of the summer, this ramen is very refreshing in the heat and is usually served in a soy sauce soup. The unique feature of it is that it is served with ice in it!


Tama Konyaku 玉こんやく

Konyaku is a healthy Japanese vegetable that some refer to as ‘devil’s tongue.’ It is usually eaten in stews, soups, etc. but Yamagata’s speciality is a spherical version served on a skewer. It is said to give you plenty of energy and is traditionally served on mountain routes, to mountain climbers who need to replenish their energy supply. Its unique chewy texture is a must-try on a trip to Yamagata.

Mogamigawa Senbon Dango 最上川千本団子

Dango is mochi made into balls and usually then put onto skewers. There are other kinds of dango but for now, let’s talk about this one. The dango served at this speciality shop is firmer than the average dango, giving it a distinctive texture. It is topped with various sweet toppings. For those with a sweet tooth, there is mitarashi sweet soy glaze, then there are others such as sweet red bean paste and matcha.
