Chiba Prefecture

Chinese Soba 中華蕎麦

Soba is a kind of noodle made from buckwheat. The Chinese-style soba made in Chiba Prefecture is generally eaten with sliced pork and spring onion, and has a soy sauce-based soup. Tsuke-men is also popular. This is when the soup is served separately from the noodles and you can dip it in as you please. Generally, this is a thicker soup than the standard one.

Komachi こまち

This is Chiba’s signature yakitori (skewered chicken) which is served at various izakayas there. It is the perfect accompaniment to many alcoholic drinks (probably non-alcoholic too, if you’re not an alcohol drinker…) and can be eaten with a sweet soy sauce or salt and lemon, depending on your preference. There are many kinds such as tsukune (minced meat ball), momo (thigh meat) and bonjiri (chicken bumhole… well, technically the meat around the hips, but I like to call it bumhole. It’s surprisingly delicious.)

White Gyoza ホワイト餃子

These gyoza are a different shape to conventional gyoza, and they’re also not white, they’re brown. I did some digging and found out that the chef who invented them learned his skills from a Chinese man whose name translates as ‘Mr. White’. It is said that they contain more juiciness than other gyoza and have a crispy exterior.
