Tokyo Metropolis

Fukagawa Meshi 深川めし

This Tokyo speciality was created by a fisherman in the Edo period and is now one of the top Tokyo specialities. Green onions and clams are boiled before being added to the rice, then more are thrown on top along with other ingredients such as seaweed. Tokyo Bay is one of the biggest business areas for fishing in all of Japan, so it makes sense that fish would be in the list!

Kuzu Mochi くず餅

Not all mochi is made from rice! This kind is made from wheat flour and is fermented for well over a year before being cut and served. It is particularly delicious with sweet sauce and kinako, a kind of powder made from fermented soybeans which is on many mochi-themed desserts in Japan. This kind of mochi is softer than rice mochi and has a shelf life of just two days.


Anmitsu あんみつ

Another famous dessert in Japan, anmitsu is famous in Tokyo. Agar, a kind of firm vegetable gelatin is used, then topped with sweet red bean paste, a sweet sauce, and often many kinds of fruits to complement it. It has shops famous for it in Tokyo, but you can buy it at almost any supermarket in Japan.

Saitama Prefecture

Gokabo 五家宝

Gokabo is a kind of wagashi (traditional Japanese sweet) that is famous in Saitama Prefecture. A rice cake is hardened with syrup to create the core; this is then wrapped with kinako (a fermented soybean powder) mixed with more syrup and hardened again. Finally, kinako is sprinkled on top. Sweets such as these complement green tea particularly well and are regularly used in tea ceremonies.

Sato Imo 里芋

This autumn potato is eaten in a multiplicity of dishes in Japan, and is famous in Saitama. It is used in many boiled dishes such as stews and miso soup, and is versatile, as of course, most potatoes are. Be sure to visit some of the famous places in Saitama that serve things ranging from sato imo croquettes to cheesy potatoes.


Mackerel Sushi 鯖寿司

A unique characteristic of this rich sushi is that it is soaked in Japanese vinegar before being broiled, releasing a unique aroma. It is fresh and firm, and will be one of the most flavourful sushis you can taste in Japan. You can dip the fish part in a little soy sauce before eating, to fully bring out the flavour, but be sure not to use too much or you will mask the rich taste of the carefully prepared mackerel.
