Use of いたす with regards to a third party

This is one of the example sentences on the site, specifically the について grammar point.
そのてんについては、担当たんとうもの説明せつめいいたします。
Regarding that point, the one in charge will provide an explanation.

What I’d like to know is the 事情 (circumstances) around the use of いたします, which I recently learned. Would this be a case of one group of people (let’s say, a team coming into a business to make a pitch) speaking to another group (their audience) about, in this case, an action that a fellow team member will be taking?

I think so yeh, it’s the humble form of to do, so in any situation where you would be humble should work. I’m not a keigo expert though so perhaps a consensus of opinion is better haha

Correct. In the most general sense, you would use humble language when speaking about a member of “your group” to “another group” that you want to/must show respect to.
Now, “your group” could be just yourself, and the other group just one person, like a conversation between you and your boss. Or, as is the case with this sentence, your group could be your colleagues, and the other group another company you do business with.
Note that, similarly, you will not attach さん to the name of a member of your group when talking to the other group. So, mentioning your boss when talking to a client, you will not attach さん, even though in a direct conversation with your boss you would do so.
This notion of group (内) is dependent on context, and you can basically think of it as a series of circles centered on you and whose radius depends on the context.

「内」の読み方は「うち」ですか。
(By the way, how is the grammar here? I know you sometimes need と with quotes, but I’m not sure exactly when.)

Yes it’s うち.
It looks fine to me. You would add a とif you wanted to qualify another noun with 内, for instance:

「内」という漢字の読み方は「うち」です。

“The reading of the kanji 「内」is uchi”. But that sentence seems a bit too much, yours looks better I think.
