so although my review type is set to ‘fill in/manual’, I’m getting quizzed ‘reveal and grade’-wise all of a sudden, but only for the grammar points I added recently. why on earth is that happening … any ideas please?

Each deck has it’s own options that overrule the global options. Can you check to make sure the deck is set to the same options?
Go into the deck > deck settings > Review Type - Vocab
