I think I know the answer to this but I might be wrong.
When you have a noun that is transforming, it takes the particle に to mark the target of the transformation (なる).
An adjective can’t take the particle に, so instead the い transforms to くto serve the same function (‘conjugates’ to mark the target of the transformation).
