If you are bad at doing something, like running, then you have
走るのが下手です
[To run] [as a noun] [が] [unskilled] [is]
The が particle only works for nouns, so you need the の to turn 走る into a noun.
日本語 is already a noun, so you could just say
日本語が下手
[Japanese language] [が] [unskilled] [is]

Also, I am using 私 way too much.
In my native language there is no need to explicitly say “I…/You…” all the time but because I am translating all sentences like:
My native language <-> English <-> Japanese, or straight between English and Japanese, my grammar is a bit left fluent and in result much worse
