The second sentence looks fine. You have already mentioned the movie, so we can easily guess what you want to watch. In fact, you could reasonably just say 妹と見る。
You’ve mentioned a movie that sounds interesting, with an implication that it sounds interesting to you in particular. So the listener can pick up that:
You are the one who will watch it, and
The thing you’re going to watch is the movie.
The main new information is that you will actually watch it, and that your younger sister will be there.

I think, without any words indicating time in the future, second sentence leaves the listener a bit unsure if you mean future plans or something else. Especially because 面白いです kind of makes it sound like you’ve already seen it and formed an opinion that it is interesting.
You could add something like いつか or そのうち (someday, soon) to indicate future.
Or use one of constructions more specifically used for future plans, for example つもりだ (JLPT N5) | Bunpro if we stay within N5 grammar.
Also, this is slightly tangential, but in the beginning it would be better to keep politeness levels consistent. If you go with polite 面白いです, then follow it up with also polite 見ます. In conversations among equals it’s not a super hard rule, but still good practice while learning.
