The only thing I would tweak is ‘あれも寿司’. This does not make real sense in Japanese, it would be said as ‘あの寿司も’, using ‘あの’ instead of ‘あれ’ as you are referring to ‘that sushi’.

Generally speaking, the sentence final verb indicates the overall tense and speech style. Some grammar forms require the use of short/casual forms but do not necessarily determine the politeness level of the utterance.
Sometimes where conjunctions do allow for the ます form to be used, it will generally carry a very formal tone.
