Kanagawa Prefecture
Edosei Butaman 江戸清豚まん
When a food ends with -man, it is a steamed bun, usually with a filling. They are sold in every convenience store, but Kanagawa has very famous ones, particularly the pork ones. They can be deceptively hot, so be careful when you eat them, but the pork filling, mixed with herbs and spices has an intense flavour that can be enjoyed as a snack or a full meal.
Whitebait しらす
Whitebait are tiny little fish that are incredibly versatile. They are too small to have bones, so you can just eat them as they are. In fact, the town where I work is also famous for these and the town mascot is made from them. You can do almost anything with them to add an extra bit of flavour, on rice, in soup, with salad, raw or boiled… anything goes!
Kamaboko かまぼこ
First invented around 1782 in order to give to guests at the famous hot springs in Hakone, these fish cakes are made by steaming fish paste to congeal it and create an elastic-textured fish cake. You will often find them in ramen and as an ingredient in fried rice, etc. but in Kanagawa, you can buy them roasted on skewers, and they are absolutely delicious.
